Today I am wearing dark brown light weight material, chino styled shorts that come above the knee with a dark brown leather belt that has a silver belt buckle. My light weight 100% cotton short sleeve t-shirt is pale yellow and tucked in and I have a pair of brown leather flip flops on my feet. My hair is in a ponytail with a black rubber band holding it up and a navy blue Abercrombie and Finch baseball hat is on my head. Earrings and Rings are diamonds and are worn but no watch today, it’s too hot out there and I don’t want a watch tan! I am comfortable today, but should have gone for the tank top today instead of short sleeves for a little less clothing in the heat and maybe no hat next time either.

Reading and Running

December 17th, 2009 admin Comments off

I have been a book lover from the time I was a little girl. I treasured walks to the library with my mother. I excelled in school and pursued my love of words with Bachelor’s and Master’s degrees in English. Now, as a high school English teacher, my hobby is my vocation. During the school year, I reread classics that I am teaching. During breaks and summer vacation, I pore through current bestsellers and old favorites. My newest hobby is running. I have always envied runners who can trek out for a few miles hardly breaking a sweat. For the past seven weeks, I have been following a 5K training program. I am up to two miles straight and I love it! I have lost 22 pounds and feel better than I have in years. My mind is clear and my stress levels are in control. I plan to run in a 5K in a nearby city in a few months and hope to pursue longer distances in the future.

Smothered Chop Steak with garlic mash potatoes

December 14th, 2009 admin Comments off

Last night I cook smothered chop steak with mash potatoes and sweet peas. Basically I used ground beef, al sauce, egg and mushroom gravy seasoning and made hamburger patties, fried them in a pan and made a mushroom gravy sauce. Very quick and easy meal you can make it in 30 minutes. I also made mash potatoes. One think that I do that allot of other people don’t use when making mash potatoes is adding chicken instant cubes and sour cream. This is an excellent substitute for using salt and butter. I also prepared a can of Green Giant sweet peas. It is important when you use can goods to make sure you get the quality name brand can goods. Lastly we had a nice glass of raspberry lemonade that complimented the dinner in its entirety and a bowl of mint chocolate chip ice cream with whip cream on top. My children love this kid friendly dinner.

Not Just Any Beach…Hilton Head Island, SC

Town of Hilton Head Island

Although I have been going to Hilton Head Island, SC for my vacations for over 25 years, I have never had the same experience twice. This last one was no exception. After arriving and getting settled into the condo at South Beach, I went over to the Salty Dog Cafe to have a drink after my long drive. As I was sitting on the patio and people watching, I noticed a pelican sitting on one of the poles close to me. He seemed to be people watching as well. Suddenly, he flew into the air and buzzed just over the heads of some people passing by me. They screamed and hit the deck as if being shot at by someone. I started to giggle and think, “This is going to be a fun vacation.” The next day, I went to the beach to walk, and noticed the dolphins swimming their usual route. I stopped to watch them, when I noticed one fin was unusually close. I stood in the water up to my mid-shin and watched the fin disappear. I was the only one on the beach, and the solitude was wonderful. Suddenly, I looked down, and noticed a dolphin’s nose on my foot…the dolphin looking up at me. I was frozen; I could not move. In my more than 25 years of coming to this particular beach, I had never seen the dolphins come to shore…much less to a person. The dolphin had come up to me as if to tell me, “Hello. Everything is going to be OK.” I had gone to get some worries off my mind and think about some personal things this vacation. And, the dolphin seemed like a “sign” for me. Another person came running down the beach, and the dolphin scooted off my foot and swam away. He asked me if I was OK, and I told him I was. He said he had never seen that before, and I assured him that I hadn’t either. It was by far the best vacation I had ever had, and I had not even been there a full day yet. I still had not been Para-sailing or swimming or bike riding, yet. Those things were made even better this last vacation by a ’simple’ visit from the little pink-bellied dolphin on my first day of my vacation.
